On a cold winter night in January 2021, with a temperature of 7°C, a gourd of enthusiasts cast out beneath a bougainvillea and eucalyptus tree on Lamma Island, Capturing the essence of the ecosystem by harnessing the wild yeast and bacteria present in the flora & fauna that night to create a unique, one-off beer , the first spontaneous koelschip of Hong Kong. Nose: Stone fruit, acetic notes. Appearance: Brilliant rich gold, cream head. Taste: Apricot is prominent up front, with residual juicy sweetness, some low floral honey notes, hints of higher acidity, creamy caramel and light butterscotch, subtle oak character and a rich and round finish.
